Split Mung Soup
People always say about this soup, “Must be heavy cream in
it!” No, just split mung beans available
at your local Indian grocery. Worth the trip for an especially tasty soup these
last blustery weeks of winter!
6 cups or more water
Pinch of epazote or hing
1 - 1 ½ inch fresh ginger root, finely chopped
½ cup fresh cilantro, finely chopped
1 ½ teaspoons ground cumin
½ - 1 teaspoon salt
3 tablespoons olive oil
Cook beans in water with epazote or hing, and ginger root for up
to an hour until beans are soft. Blend cilantro, cumin, salt, and olive oil
with a hand-held blender; serve.
